Pumpkin Canapé, Whipped Burrata, Rye Crostini, Sage Gastrique

Paired with Je T’aime Brut Rose

Lively, delightful sparkling wine made with Chardonnay grapes from the Limoux region of France.

Course 2

Pistachio Lacinato Kale Salad, Honey Crisp Apple, Pecorino, Pancetta Vinaigrette

Paired with Poets Leap Riesling

Poet’s Leap is an off-dry Riesling with expressive, spicy aromatics and generous, lively flavors. Fresh melon, honey, ripe apricot and a hint of citrus jump on the palate leaving a vibrant, racy impression and a long, clean finish.

Course 3

Day Boat Scallops, Roasted Tomato Buerre Rouge, Parsnip Purée, Sage Oil, Crispy Farro

Paired with Pedestal Merlot

Pedestal is a deeply concentrated wine with wonderfully intense aromas of dark cherry, violet and marionberry. A core of ripe blackberry flavors are framed by notes of oak spice, roasted coffee beans and bittersweet chocolate that leave a bold impression on the finish.

Rib Eye Cap Steak, Local Black Truffle, Demi Glace, Roasted Baby Chioggia Beets

Paired with Chester Kidder Red Blend

Deep crimson colored with gorgeous aromas of blackberry, mocha and sweet herbs. Across the palate, the intensity and complexityof flavors build, ranging from ripe plum and rich black cherry to pleasant notes of graphite. This is a wine with excellent structure, creamy texture and delicate finesse from beginning to end.

Course 5

Red Wine Poached Pear, Hazelnut Tuile, Peppered Ricotta

Paired with Feather Cabernet Sauvignon

100% Cabernet Sauvignon that was brought up in 90% new French oak barrels. Its inky purple color is followed by a seamless, pure, impeccable balanced Cabernet that has load of currants, scorched earth, graphite, and espresso aromas and flavors.
