Our Story

Where It All Began.

My dad, Tim Morris, grew up in the glow of fryer lights and counter service — his father started the beloved chain Herfy’s, and the fast-food world raised him. His mom, notoriously uninspired in the kitchen, left young Tim to fend for himself. He started cooking to survive… and fell in love with it.

What started as necessity turned into a calling. Tim opened the renowned La Chatelle in Seattle, then launched Lucca’s pasta bars in malls across the region. But the dream was always something slower — something that lingered. A place with linen napkins, candlelight, and a sense of arrival.

When the opportunity came to open a full-service restaurant in downtown Edmonds, he jumped.

The Name That Meant Everything.

That night, we stayed up late — me and my dad — scribbling on napkins and tossing around names. We kept coming back to one truth: we wouldn’t be anything without our guests. The people who would walk through the doors and fall in love with the food, the music, the people.

Somewhere in a Latin dictionary, I found the word Epulo — “a guest at a feast.”
It was perfect. It still is.

Born into it.

On my mom’s side, both grandparents were born in Lucca, Italy. They moved to Yakima and opened a restaurant of their own. I was raised around long tables, garlic simmering on the stove, and grandparents yelling “Mangia! Mangia!” like it was gospel.

Food was our language.

So was grit. Despite begging to go to hospitality school, my parents insisted I get a "real degree" — so I got one. A math degree. I spent five years in finance, trying to quiet the pull. But it never left. Wine found me next. And eventually, Epulo called me home.

A Second Generation, A New Chapter.

In January 2025, I became the proud owner of Epulo. My dad handed me the keys to everything he built — and I stepped into a space that already knew me, and that I knew deeply in return.

I’m here to honor what came before while reimagining what comes next.
The music plays on. The wine flows freely. And the feast — it continues.
